A trailing herbaceous perennial vine in the morning-glory family (Convolvulaceae), grown across Oklahoma as a warm-season annual for its large, sweet, starchy storage roots — not tubers, and not botanically related to either the white potato (Solanum tuberosum) or the true yam (Dioscorea). One of the world's most important food crops, with roughly 5,000 years of domestication in Central and South America. NE Oklahoma's long, hot growing season is excellent for sweet potatoes — better, in fact, than for white potatoes — and a few 'Beauregard' or 'Georgia Jet' slips will produce a substantial harvest with very little water once vines establish.

Habit & Vine

A trailing herbaceous perennial vine (grown as an annual in temperate climates) reaching 4–16 ft of runner per plant in a single Oklahoma season. Stems are slender, green to purplish, often rooting where leaf nodes touch moist soil — a useful trick for filling space and a hint at the plant's morning-glory ancestry. Whole-plant habit is a low, sprawling mat that can carpet a 25–50 ft² bed by August.

Leaves

Alternate, simple, long-petioled, and highly variable in shape even within a single cultivar: classically heart-shaped (cordate) but frequently palmately 3–7 lobed, with margins from entire to deeply incised. Dark green in standard cultivars; purple, bronze, or chartreuse in ornamental selections ('Ace of Spades', 'Sweet Caroline', 'Margarita'). The morning-glory leaf shape is the easiest single field cue.

Flowers

Lavender-pink, funnel-shaped, morning-glory flowers ~3–5 cm across with a darker throat — unmistakably Ipomoea. Uncommon under cultivation in temperate zones (Oklahoma included) because the plant must reach a certain age and daylength to flower; gardeners sometimes go years without seeing one. In subtropical climates flowering is routine. Pollinated by bumblebees, sweat bees, and occasionally hummingbirds.

Storage Roots (not tubers)

The edible part is a true storage root — an enlarged secondary root, with normal root anatomy (no eyes, no nodes) — not a tuber. This is a key botanical distinction: the white potato (Solanum tuberosum, Solanaceae) produces stem tubers with eyes; sweet potato produces root tubers without eyes. Skin colors range cream/white → yellow → orange → red → purple; flesh from white to deep orange to vivid purple depending on cultivar.

Habitat & Adaptation in NE Oklahoma

Sweet potato is a tropical lowland crop from the Americas that needs heat, sun, and a long warm-soil window to bulk up storage roots. Northeastern Oklahoma is well-suited: Tulsa-region soils warm reliably above 65 °F by mid-May, summer night temperatures stay high enough to drive root development, and the regional 95–130-day frost-free window covers the 90–120-day crop cycle of most cultivars with a comfortable margin. The U.S. sweet-potato production heartland (Louisiana, Mississippi, North Carolina) sits one zone south, but the underlying climate — long humid summer + mild fall — is shared.

Plant slips (rooted shoots grown from a stored sweet potato) after the soil reaches 65 °F at 4 in depth — usually mid-May around Tulsa. Harvest before the first hard frost of fall (typically late October / early November, but watch the forecast); even a light frost on the foliage signals you should lift within a few days, because cold-injured vines transmit rot down into the roots. Cure the harvested roots immediately at 80–85 °F and ~85% relative humidity for 7–10 days, then store cool (55–60 °F) and dry. Curing heals nicks, converts starches toward sugars, and is the single most important step separating a six-month pantry crop from a compost heap.

Native cousin alert: The morning-glory family is well represented in OK natives. Ipomoea panduratawild potato vine — is native across nearly all of Oklahoma and produces a massive perennial taproot (historically eaten by Indigenous peoples after long cooking). It is the closest native relative of the cultivated sweet potato you'll meet in a Tulsa-area prairie or wood edge.

Pollinators & Flower Visitors

When sweet potato does flower in temperate gardens (most often in long warm autumns), the lavender-pink corollas attract bumblebees (Bombus), large sweat bees, and ruby-throated hummingbirds — the same guild that visits other Ipomoea morning glories. Crop value of these visits is essentially zero (sweet potato is propagated vegetatively from slips, not from seed), but for a pollinator garden the late-summer bloom is a bonus.

Mammal Browse

Deer love sweet potato foliage and will mow new vines flat overnight; voles and ground squirrels tunnel for the roots. In NE Oklahoma a deer fence or repellent rotation is strongly recommended for any plot more than a token planting. Rabbits will browse young vines until the bed is fully sprawling.

Insect Pests

The defining pest is the sweet potato weevil (Cylas formicarius) — a quarantine pest in the U.S. South and the single biggest reason to source clean, certified slips rather than plant grocery-store roots. Other regional concerns: wireworms (chewed root surfaces), flea beetles (cosmetic leaf damage), and Fusarium stem rot in wet years. Crop rotation on a 3-year cycle prevents most soil-borne issues.

Native Family Ties

As an introduced crop, sweet potato has few co-evolved associates in NE Oklahoma — but its family does. Convolvulaceae includes the native Ipomoea pandurata (wild potato vine) and several Tulsa-region morning glories, all of which support generalist Ipomoea pollinators and serve as larval host plants for the Agrius sweet-potato hornworm moths. The cultivated sweet potato fits into that ecological niche even though it is not native here.

Permaculture role: Aggressive living mulch & root crop in the herbaceous-to-groundcover layers. Pairs naturally with Three Sisters mounds (corn / beans / squash) in Indigenous-style food-forest plantings, where the sweet-potato vines extend the squash-vine groundcover function and produce a second below-ground harvest. Excellent fit alongside okra and southern peas in a heat-tolerant summer guild.

Site, soil & bed prep

Choose the sunniest spot you have — full sun, 8+ hours. Sweet potatoes want a loose, sandy or sandy-loam soil at least 10–12 in deep; heavy Tulsa clay produces small, knobby, weirdly-shaped roots that are hard to clean and hard to store. If you only have clay, build raised ridges (8–10 in tall, 12 in wide) or use raised beds with imported sandy loam. Target pH 5.8–6.5. Do not over-fertilize with nitrogen — high N produces lush vines and disappointing roots. A modest pre-plant dose of balanced compost is plenty.

Slips: source & planting

Sweet potatoes are propagated from slips: 6–9 in rooted shoots forced from a mature stored sweet potato. Buy certified disease-free slips from a reputable nursery (Steele Plant Co., Sand Hill Preservation, Burpee, local extension plant sales). Order to arrive the week of mid-May for Tulsa. Never plant grocery-store sweet potatoes — commercial roots are typically treated with sprout-inhibiting chemicals, and even when they sprout they may carry sweet-potato weevil, viruses, or soil-borne fungi that establish in your garden for years.

Watering & mid-season care

Once vines are running (typically 3–4 weeks after planting), sweet potatoes are notably drought-tolerant — significantly more so than white potato or sweet corn. One deep soak per week during severe August dry spells is plenty; over-watered plants split roots and rot in storage. Stop irrigation entirely 2–3 weeks before harvest to firm the skins. Lifting and re-laying long vines once or twice in August prevents them from rooting at every node and producing many small roots instead of a few good ones — a traditional Southern field practice still worth doing in a home bed.

Harvest & the curing protocol

Lift roots 90–120 days after transplanting, before the first hard frost. Loosen with a digging fork well outside the crown so you don't slice the largest roots. Handle gently — sweet-potato skin is paper-thin at harvest and nicks invite rot. Do not wash before curing; brush off loose soil only.

Curing is mandatory. Hold freshly dug roots at 80–85 °F and ~85% relative humidity for 7–10 days. This heals harvest wounds, thickens the periderm (skin), and converts starches toward sugars — making the roots both storable and sweet. A small bathroom with a space heater + open pan of water + a shower curtain works. After curing, store at 55–60 °F in a dry pantry or basement; never refrigerate — chilling injury below 50 °F causes pithy texture and off flavors. Properly cured roots keep 6–10 months.

Source slips, not grocery roots. Sweet potato weevil (Cylas formicarius) and several viral diseases are transmitted on uncertified planting stock. Buy from a U.S. nursery that produces clean, indexed slips — one bad grocery-store root can establish weevils in your soil for years and trigger a state quarantine response in commercial regions.

Companion planting in a food forest

Sweet potato pairs naturally with okra (shared heat tolerance, complementary canopy heights), southern peas (legume nitrogen supplied at modest rates that suit the crop), corn / beans / squash in expanded Three-Sisters style mounds, and peppers. The vines function as a living mulch, shading soil and suppressing summer weeds across an entire bed. Avoid planting where white potatoes, tomatoes, or other Solanaceae have been recently — they share some soil pathogens despite belonging to a different family.

Culinary & Cultural Uses

Sweet potato ranks among the seven most important food crops worldwide by tonnage, with China the largest producer and most of sub-Saharan Africa now heavily reliant on it. Cultivated for ~5,000 years in Central and South America, sweet potato had spread across the Polynesian Pacific (where it is called kūmara, 'uala, kumar) before European contact — a remarkable pre-Columbian dispersal supported by both linguistic and modern genomic evidence. In the U.S. South it is the foundation of an enormous regional cuisine; sweet-potato pie is a defining Southern dessert, and the candied sweet-potato casserole appears on virtually every Thanksgiving table.

Sweet potato is NOT a yam. True yams are species of Dioscorea — an entirely different plant family (Dioscoreaceae), native to tropical Africa and Asia, with rough bark-like skin and large climbing vines. True yams are rarely sold in U.S. grocery stores. The "yam" labeling on U.S. orange-fleshed sweet potatoes is a marketing convention dating to the 1930s, when Louisiana shippers wanted to distinguish soft, moist orange-fleshed cultivars from drier, white-fleshed types — the USDA still requires the word "sweet potato" appear alongside any "yam" labeling. If you've never been to a West African or Caribbean market, you've almost certainly never seen an actual yam.
