Sorghum bicolor

The fifth-most-important cereal crop in the world and one of the most drought-resilient food plants ever domesticated, sorghum is the right grain for a hot, dry continental summer like NE Oklahoma's. Domesticated in northeast Africa more than 5,000 years ago and brought to the southern US in the 19th century via the African slave trade, sorghum became the foundation grain of the central and southern Plains — "the corn of the plains" — precisely because it produces a reliable harvest on rain that would not finish a crop of corn. The species encompasses three major crop types: grain sorghum (milo), sweet sorghum (for the famous sorghum molasses/syrup), and broomcorn (for craft brooms). All three grow well in NE Oklahoma garden plots.

Habit & Vegetative Form

A robust, single-stemmed (occasionally tillering) C4 annual grass superficially resembling corn (Zea mays) at a distance. Stems are stout, solid (sweet sorghum) or partly pithy (grain sorghum), 3–14 ft tall depending on variety. Leaves are alternate, broad (1–3 in wide), 1–3 ft long, with a prominent white midrib and a wax-coated upper surface — the wax bloom is a major part of the species' drought tolerance, dramatically reducing leaf transpiration. Distinguished from corn by the much narrower stem, the more upright leaves, and the diagnostic terminal panicle inflorescence (corn has a terminal pollen tassel and lateral ear).

Inflorescence & Grain

The diagnostic feature of all sorghums is the terminal panicle: a dense branched cluster of seed at the top of each stem, 4–14 in long, ranging from extremely compact and erect (grain sorghum, milo) to long, drooping, and open (forage sorghums and broomcorn). Grain color varies from white through tan, red, brown, dark purple, to nearly black, depending on variety — one of the most diverse seed-color palettes of any cereal grain. Each individual seed is small (~3–4 mm), round-to-oval, and partially exposed (not fully enclosed in a hull as in oats or barley).

Crop Types

The species S. bicolor is one of the most morphologically diverse domesticated cereals. The four agronomic types:

  • Grain sorghum (milo): short (3–5 ft), compact erect head, large grain harvest. The dominant US production type, including the heart of OK and KS production.
  • Sweet sorghum: tall (8–14 ft) with high sugar content in the juicy stalks; grown for sorghum syrup ("sorghum molasses"). Strong Appalachian/Ozark heritage crop.
  • Broomcorn: tall, with a long open panicle of stiff straw used for craft brooms. Oklahoma was historically a major broomcorn-producing state (Lindsay, OK).
  • Forage / Sudangrass / hybrid sorghum-sudan: grown for hay, silage, and grazing, often as hybrids with S. sudanense.

Confusables

  • Corn / Maize (Zea mays): terminal tassel of male flowers + lateral ear of female flowers; broader leaves; thicker stalk. Sorghum has a single terminal panicle bearing the grain.
  • Johnsongrass (Sorghum halepense): perennial, rhizomatous, weedy escaped relative; smaller seed head; slender stem; highly invasive; produces toxic prussic acid under stress (caution if pasturing livestock).
  • Pearl millet (Pennisetum glaucum): candle-like cylindrical seed head, not branched panicle.
  • Sugarcane (Saccharum officinarum): much taller, forms perennial canes; not regionally grown.

Range, Adaptation & NE Oklahoma Production

Sorghum is not a native species in North America — it was domesticated in northeastern Africa (modern Sudan/Ethiopia) at least 5,000 years ago, traveled across Africa and Asia in antiquity, and was brought to the southern US in the 17th–19th centuries primarily through African slave-trade routes; many Plains and Southern sorghum traditions trace directly to West African agricultural heritage. By the late 19th and early 20th centuries it had become the foundation grain of the southern and central Great Plains, perfectly adapted to the region's hot summers and erratic rainfall.

Oklahoma is consistently among the top five US states for grain sorghum production, with major commercial acreage across the western Oklahoma panhandle, the central Plains, and into NE Oklahoma's drier western counties. Yields per acre on commercial dryland sorghum in OK regularly exceed 60–90 bushels, even in years when corn fails — the practical engineering reason sorghum continues to be planted across the southern Plains. For NE Oklahoma garden growers, sorghum is one of the easiest grain crops to grow at home: it asks for nothing more than full sun, warm soil, and a late-spring planting, and it rewards even badly drought-stressed seasons with a usable harvest.

Drought-resilience biology

Sorghum's exceptional drought tolerance derives from a combination of traits: an unusually deep, dense fibrous root system (often 6+ ft); a thick wax cuticle on stems and leaves that dramatically reduces transpiration; the ability to roll its leaves under heat stress (a visible canopy response on hot dry days); and the ability to enter dormancy under severe drought and resume growth when rain returns. C4 photosynthesis (shared with corn, sugarcane, and the warm-season prairie grasses) gives sorghum excellent water-use efficiency in hot conditions — sorghum needs roughly half the water of corn for the same biomass.

Pollination

Sorghum is primarily self-pollinated and wind-pollinated (~95%+ self), which is why open-pollinated heirloom varieties stay relatively true to type from year to year and are practical for the home seed-saver. A small fraction of cross-pollination occurs (~5%), so for absolute purity, separate different sorghum varieties by 100 ft or by 7–10 days flowering offset. Importantly: sorghum will hybridize with weedy johnsongrass (S. halepense); if johnsongrass is present nearby, isolation is more difficult.

Wildlife value

Mature sorghum heads are an extraordinary wildlife food source. Field studies across the central US identify sorghum as a primary fall and winter food for mourning dove, bobwhite quail, ring-necked pheasant, wild turkey, white-tailed deer, fox squirrel, raccoon, and many granivorous songbirds (cardinal, white-throated sparrow, junco, dickcissel). NRCS upland game-bird food plots and CRP wildlife plantings throughout OK routinely include grain sorghum (milo) for this purpose. A small home plot of grain sorghum left standing through fall will dramatically boost backyard bird traffic.

Companion / rotation

Sorghum is a heavy nitrogen feeder — rotate it with legumes (cowpea, southern pea, soybean) the following season to restore soil N. Sorghum's massive root system and decomposing stubble add substantial organic matter to soil, especially in heavy clay sites. Avoid consecutive sorghum-on-sorghum rotations (allelopathy and disease pressure both build); a 2–3 year rotation is standard.

Sorghum syrup — a southern American craft tradition: Sweet sorghum syrup ("sorghum molasses," though it is not technically a molasses) is one of the iconic regional sweeteners of the Ozarks, Appalachia, and the Mid-South. Stalks are crushed in a roller mill, the green juice is cooked down 10:1 in shallow open evaporator pans over wood fire, and the resulting amber-to-dark syrup is bottled. The Vinita and McAlester regions of E Oklahoma have small-batch syrup-making heritage; commercial production today is concentrated in TN, KY, and AR.
Prussic acid (cyanogenic glycosides) — livestock caution: Young, drought-stressed, or frost-damaged sorghum (and especially Sudangrass and sorghum-sudan hybrids) can accumulate cyanogenic glycosides (dhurrin) that release prussic acid (HCN) when chewed by livestock, potentially fatally. Do not graze cattle or horses on stressed, immature, or frost-damaged sorghum. This is not a concern for grain harvested for human consumption, but it is a real risk for grazing systems — consult OSU Extension before grazing.

When & how to plant

Sorghum needs warm soil — do not plant until soil temperatures at 4 in depth reach a sustained 65°F, typically early-to-mid May in the Tulsa area (about 2 weeks after the last expected frost, around the same window as corn but a week or two later). Direct-seed (sorghum does not transplant well): rows 30–36 in apart, seeds 1–1.5 in deep, 4–6 in apart in row, then thin to 8–12 in spacing once seedlings are established. Seed germinates in 5–10 days under warm conditions.
