Dent corn is the dry-grind, hard-grit, mature-on-the-stalk corn that built the Southern food economy — the cornmeal in cornbread, the grits in a breakfast skillet, the masa in tortillas, and the feed corn under every NE Oklahoma livestock barn for two centuries. Distinguished from sweet corn (eaten fresh, not stored), flint corn (harder grain, often Northeast/Andean), flour corn (very soft starch, Southwestern) and popcorn (impermeable hull, explosive endosperm) by the characteristic "dent" that forms on the crown of the kernel as the soft starch dries. Heirloom dents like Cherokee White Eagle, Hickory King, Pencil Cob and Bloody Butcher are the open-pollinated, regionally-adapted dents that have anchored Oklahoma three-sisters gardens since territorial days — and that still grind into far better cornmeal than anything you can buy in a grocery store.

Identification

Stalk & foliage

A large warm-season annual grass reaching 6–14 ft in NE Oklahoma depending on variety. Stems (culms) are unbranched, jointed, pithy and usually 1–2 in thick at the base; mature plants develop brace roots from the lower nodes that anchor the plant against summer thunderstorms. Leaves are alternate, lanceolate, 2–4 ft long, with a pale midrib and a small membranous ligule at the base — distinctive enough that it cannot be confused with any other plant in a NE OK garden.

Tassel, silk & pollination

Corn is monoecious: separate male and female flowers on the same plant. The tassel at the top of the stalk is the male inflorescence — a panicle of branches bearing thousands of pollen-shedding anthers. The ears, formed at leaf axils on the stalk, are the female inflorescences; each silk emerging from the husk is the stigma of a single potential kernel. Pollen is shed for 5–8 days in mid-summer; it is gravity- and wind-borne, and the silk of the same plant typically receives pollen from a neighbor (protandry — tassels mature before silks of the same plant). This is why corn must be planted in a block, not a single row: a 4×4 minimum block ensures pollination.

Kernel — the dent

The diagnostic feature of dent corn versus other types: the kernel has a cap of soft floury starch at the crown and harder vitreous starch on the sides. As the kernel matures and dries on the cob, the floury crown shrinks and creates the characteristic dimple or "dent" that gives the type its name. Color ranges from yellow to pure white (most common in NE OK heirloom dents) to red, blue and multi-colored.

Compared to other corn types

Sweet corn (Z. mays var. saccharata): high sugar in the milk stage, picked fresh, kernel wrinkles when dried; not for grinding. Flint corn (var. indurata): all-vitreous kernel, no dent, harder grain; classic Northeast and Andean type. Flour corn (var. amylacea): all-floury kernel, very soft, easy hand-grinding; classic Southwestern Pueblo type. Popcorn (var. everta): impermeable hull, explodes when steam-pressurized. Dent sits between flint and flour and is the standard grinding corn of the historical American South.

Habitat & Range in NE Oklahoma

All cultivated corn descends from teosinte (Zea mays ssp. parviglumis), domesticated in the Balsas River basin of southern Mexico roughly 9,000 years ago. Maize spread north along trade routes, reaching the present-day Cross Timbers and tallgrass prairie of eastern Oklahoma well over a thousand years before European contact. Dent corn as a recognized type is more recent — the product of Southern US selection in the 18th and 19th centuries crossing southern flour types with Northern flints — but it became the standard field corn of the southeastern US, including the farms of the Five Civilized Tribes after the Indian Removals (1830s) and of the non-Indigenous settlers who came after the Land Run of 1889.

Corn does not persist in the wild in Oklahoma — it has been bred for so long that mature kernels do not shatter and seedlings cannot establish in unbroken sod. Volunteers from spilled seed in field margins are killed by frost or outcompeted by perennial vegetation within a season. As a cultivated crop, however, corn (almost all of it modern dent or commodity field hybrids) is one of the dominant row crops of the Arkansas and Verdigris bottomlands; the OSU Mesonet network and OSU Extension's Field Crops Production series document growing-degree-day patterns that govern planting and harvest dates from Tulsa north to Bartlesville and east to Tahlequah. For the home gardener and small-scale farmer in the region, heirloom open-pollinated dents like Cherokee White Eagle (Tahlequah-area heritage) and Hickory King (Appalachian and Ozark staple) are the right place to start.

Wind pollination & block planting

Corn is a wind-pollinated grass — pollen drifts from tassel to silk on the same plant or, more often, to a neighbor. A single short row results in poorly filled "nubbin" ears with missing kernels; plant in a block of at least 4×4 plants to get full pollination. Pollen viability is short (1–2 hours in NE OK summer heat), which is why hot dry weather at silking is the biggest yield risk.

Three-sisters polyculture

The three-sisters interplant — corn, beans/cowpeas, and squash — is documented in Caddoan, Wichita, Cherokee, Choctaw and Creek gardens in eastern Oklahoma since pre-contact. Corn provides a living trellis for the legume; the legume fixes nitrogen and feeds the corn; the squash spreads a living mulch that suppresses weeds and conserves moisture. The polyculture yields more total food per acre than the same area in monoculture corn, bean or squash, and is one of the most ecologically intelligent food-production systems ever developed.

Wildlife at the cob

Corn is irresistible to wildlife in the milk and dough stages — raccoons are the worst offender across NE Oklahoma backyard gardens, capable of flattening a small block in one night. Crows, blue jays and grackles open husks on standing ears; deer browse silks and pull whole young plants; feral hogs ravage maturing fields in rural settings. Wild turkeys, doves, and sparrows clean up fallen kernels at harvest. None of this is "wildlife value" in a conservation sense — it is depredation pressure to plan for.

Insect pests & the ear-tip worm

The corn earworm (Helicoverpa zea) is the standard NE OK pest — the moth lays eggs on emerging silks, larvae feed at the ear tip. Cosmetic damage is acceptable for dent corn (just trim the tip before grinding). European corn borer is rare in OK; fall armyworm is more serious in late plantings. Corn flea beetle can vector Stewart's wilt; rotate ground.

Plant in a block, not a row: If you remember nothing else about corn, remember this. A 4-row strip 8 ft long pollinates worlds better than a single 32 ft row. For a small backyard, plant a 4×6 to 6×6 block at 12 in spacing in 30 in rows; for three-sisters, plant in 4–5 ft mounds with 4 corn plants per mound, with squash and beans/cowpeas around the base.
Cross-pollination & isolation: All Zea mays types (sweet, dent, flint, flour, popcorn) cross freely. If your neighbor grows sweet corn within ~660 ft and pollen flights overlap, your dent kernels will be contaminated and your seed will not breed true the next year. For seed saving: isolate by 660 ft minimum, OR plan plantings so silking dates are 14+ days apart, OR hand-pollinate with bagged tassels and silks. For grinding-only use (no seed saving), some genetic mixing is cosmetically visible but does not meaningfully affect cornmeal quality.

When to plant

In NE Oklahoma, direct-sow dent corn between April 15 and May 15 once soil temperature at 2 in is steadily above 55°F (60°F is better). Earlier sowings risk cold-rot; later sowings push pollination into the worst July heat and reduce yield. A second planting in late June can be made for late-season grain, but August silking under prolonged 100°F heat regularly fails.

Corn needs 1 in of water per week from emergence; the most sensitive period is the 2-week window from silking through early kernel fill, when drought stress causes the most yield loss. In a typical Tulsa July, expect to supplement rainfall with deep weekly watering or drip irrigation. Overhead sprinklers during pollen shed wash pollen off tassels and reduce pollination — water early morning or by drip if possible.

Corn is the most significant single crop in the agricultural and culinary history of the Americas, and dent corn specifically is the form most tightly bound to the historical foodways of the southeastern US, including NE Oklahoma. A single backyard block can produce a year's worth of cornmeal, grits and tortilla masa for a household.
